Cowboy Cookies

1 c. shortening(1/2 crisco & 1/2 marg. or all of either)  

1 c. granulated sugar   

1 c. brown sugar (firmly packed)           

2 eggs 

2 c. quick rolled oats       

1 tsp. vanilla    

1 pkg choc.chips

6 oz size (1-2 c. depending on taste)   

1 c. chopped nuts                 

2 c. flour          

1 tsp. soda      

12 tsp salt                            

1/2 tsp baking powder           


 

Sift dry ingredients together (flour, soda salt, b. powder).    Cream shortening (but not as fine as for cake baking), add white sugar & mix well, then add brown sugar.  Add eggs one at a time.  Add dry ingredients, then rolled oats and vanilla.  Dough is very stiff.  Fold in by hand nuts & choc. bits.  Drop by scant tsp. for each cookie on baking sheet, not too close together as they flatten out and are very crisp.   

 

Bake 10-12 minutes @ 350.

3 lemons          

2 oranges        

1  2- inch stick cinnamon         

6 whole cloves 

1/2 c. sugar or honey- to taste 

6 c. cider                                                                                 


 

With serrated knife, peel the rind from 1 orange & 1 lemon in a continuous spiral.  Squeeze the juice from all oranges & lemons.  In enamel or stainless steel pan gently heat the orange & lemon juice w/ spices & sugar or honey, stirring until the sugar is dissolved.  Add the cider & heat gently until almost boiling. Add orange & lemon rind.  Cover & let infuse over low heat w/out boiling for 10 or 15 min.    

 

Serves 6 or 8 in a 10 oz. punch mug.                 6-8

1 cup butter     

1/4 cup confectioner’s sugar   

2 tsp. vanilla    

1 Tbsp. water  

2 c. sifted flour 

1 c. chopped pecans 


                                                                       

 

Cream butter & conf. sugar.  Add vanilla & water.  Add flour & mix well.  Add chopped pecans.  Form small rolls.  Bake on un-greased sheet at 300  for 20 minutes. While hot, roll in 10 x sugar.  Be careful…..they are very delicate.

3 cups flour sifted   

1/4 tsp. soda   

2 sticks butter, softened          

3 cups sugar    

6 large eggs     

1 cup sour cream  

1 tsp vanilla (or 1/2 tsp almond flavoring)


  

Sift & measure 3 cups flour.  Resift twice w/ 1/4 tsp. soda.  Cream sticks of softened butter.  Add sugar slowly.  Cream well.  Add eggs, one at a time, beating well after each addition.  Stir in sour cream.  Add dry ingredients, 1/2 at a time, beating constantly. Stir in vanilla.  Pour into well greased floured 10 inch tube pan.  Bake 1 1/2 hours in 325 oven.  Place pan on rack to cool 5 min.  Loosen cake around edge of pan & edge of tube w/ dull side of table knife.  Press toward pan rather than toward cake. This protects crust.  Turn cake onto rack to cool immediately.            39-40 min.

6 eggs (beaten)

1/4 lb. butter, melted 

1 1/2 C. chopped pecans 

3 c. brown sugar   

2 tsp. vanilla    


                                                                                   

 

Beat eggs thoroughly; add sugar & continue beating.  Add melted butter, vanilla & pecans.  Mix well. Pour this mixture into two pie crusts & bake until firm & golden brown….    400 degrees for 15 min. then 350 for 30-35 minutes.  Cool to room temperature.

2 c. sifted flour 

1/2 tsp. salt      

1/3 c. shortening (Crisco)           

1 Tbsp. baking powder           

1/4 tsp. soda   

1 c. buttermilk


                                                                                   

 

You may need 2 or 3 more Tbsp of buttermilk, depending on how thick the buttermilk is.  You don’t want your dough too stiff like pie crust.  Roll out on floured cloth to1/2 to 3/4 inch thickness.  Cut w/ biscuit cutter and bake @ 450 about 12 minutes.

4 1/2 cup sugar

pinch salt         

1 stick butter   

1 can evap. milk (13 oz.)    

1 Tbsp. vanilla            12 oz. semi sweet choc. bits         

12 oz. Ger. sweet choc.     

1 pt. marshmallow cream (2   7 oz. jars)    

2 c. chopped nuts (opt.)


 

Can use 24 oz. of choc. chips              

 

Place marshmallow cream in big mixing bowl.  Just before pouring cooked mixture, put choc. over marshmallow cream(so it won’t sink in).  Cook the sugar, salt, butter, and milk for approx. 10-12 minutes over medium heat after it comes to a boil (soft ball stage-236 deg. F.)  Last add the vanilla & nuts.  Stir with strong spoon until choc. is melted and all is mixed well.  Pour into a 9×13 buttered pan.  Cool and cut.       45 min.

Crust:  


1 Tbsp cinnamon                    

2 1/4 c. graham cracker crumbs           

2 Tbsp. sugar             

4-6 Tbsp melted butter


           

 

Filling:


3 eggs            

rind of 1 lemon, grated            

1 Tbsp. vanilla           

1 Tbsp. melted butter            

1 tsp. lemon juice              

1 c. sugar                  

3 (8 oz.) Phila. cream cheese             

1 1/2 pt. sour cream(3 C. )    


  

Beat cream cheese & add sour cream.  Beat in sugar & add lemon juice & rind.  Add vanilla & beat til smooth.  Fold in melted butter.  Pour filling into prepared refrig. crust.  Bake 45 min. @ 350.  Cool.  Refrigerate   Needs to be prepared in a spring form pan.

2 1/2 cups sugar                          

6 eggs 

4 cups flour                                 

2 cups veg. oil 

4 tsp. cinnamon                           

1 tsp. vanilla    

4 tsp. baking soda    

1 tsp. salt                     

1 cup shredded coconut           

1 cup raisins    

4 cups shredded carrots 

2 apples, shredded         

1 cup pecans   


           

 

Mix together into a large bowl the sugar, flour, cinnamon, baking soda, and salt.  Add coconut, raisins, carrots, apples, & pecans & stir well.  Add slightly beaten eggs, oil, & vanilla, stirring only until blended (not beaten)  Spoon into greased muffin tins and bake in a preheated 375 degree oven for 20 minutes.                                                              YUMMY         YUMMY         YUMMY            Long            16-20

1 1/2 c. white cornmeal         

1/2 c. flour       

2 tsp. baking powder           

1 tsp. salt         

1 Tbsp. sugar  

3/4 c. milk       

3 Tbsp fat (melted Crisco)

1 egg               


                                   

 

Beat egg slightly & combine with milk.  Add mixed dry ingredients & fat.  Cook 20 min in a hot 425 oven.  The same ingredients plus onions, & with a little less milk make Hush Puppies when fried along with fish.
