Chedddar Chowder

Cheddar Chowder

Soup

2 c. boiling water
2 c. chopped potatoes
1/2 c. carrot slices
1/2 c. celery slices
1/4 c. chopped onion
1 1/2 tsp salt
1/4 tsp. pepper
1/4 c. margarine
1/4 c. flour
2 c. milk
2 c. shredded sharp cheddar cheese
1 c. ham cubes

Combine water, vegetables, & seasonings. Cover; simmer 10 min. DO NOT DRAIN . Make a white sauce with margarine, flour, & milk. Add cheese; stir until melted. Add ham & un-drained vegetables. Heat. Do Not Boil. 6-8

1 lb. rippled edge lasagna    

1 lb. ground beef     

2 T. olive oil    

32 oz. spaghetti sauce   

1/2 c. tomato juice or water  

11/2 tsp. salt    

3/4 tsp oregano, crushed (or Italian seasoning)       

1/4 c. grated Parmesan cheese

12 -3/4 lb. cottage (ricotta) cheese 

8 oz. shredded mozzarella       

4 eggs 

1/8 tsp. pepper   

1 tsp salt   

1/4 t. oregano  


  

Sauté meat in olive oil, breaking it into small particles as it browns.  Add the next 4 ingredients and simmer 15 min. longer.  Cook lasagna as directed on package.  Prepare a filling by mixing remaining ingredients together.  Place a little sauce in bottom of greased 9×13 pan; alternate w/ layers of lasagna, cheese filling, meat sauce, lasagna, filling and lasagna.  Cover the top with remaining sauce.  Sprinkle w/ additional Parmesan cheese, if desired.  Bake in preheated 375 degree oven for 40 min or until hot and bubbly.  Makes 8 3×4 inch servings.                       6-8

Down South BBQ

2 onions, sliced
4-5 pound pork roast
5-6 cloves
2 c. water
16 oz. bottle barbecue sauce
1 large onion, chopped

Put half of onions in bottom of crock pot then add meat & other ingredients with remaining onion on top. Cover & cook overnight or 8-12 hours on low. Remove fat & bone from meat. Put meat back in crockpot. Add onion and barbecue sauce. Cover & cook additional 3-5 hours on high or 8-12 on low, stirring 2 or 3 times. Serve from crock pot on large buns. crock pot

8 boneless chicken breast halves

1 8 oz. carton sour cream      

8 strips bacon  

1 3oz. pkg. smoked dried beef     

1. can mushroom soup, undiluted


                                                                                   

 

Cover bottom of greased baking dish with dried beef.  Wrap bacon around each chicken breast and place on dried beef.  Mix sour cream and soup.  Pour over chicken.  Bake uncovered at 300 for 2 ½  hours.  Sometimes I cover and cook for only 1 1/2 hours

Sausage & Spinach Pie

1 lb. sausage    

6 eggs 

1 small onion   

2 10oz. pkgs. frozen chopped spinach(thawed, Well drained) 

16 oz. pkg. mozzarella shredded         

15 oz. container ricotta (or cottage) cheese

1/2 tsp. salt      

1/8 tsp. pepper

1//8 tsp. garlic powder           

Pie crust for 2 crust pie          

1 Tbsp. water


           

 

Sauté sausage & onion, stirring frequently to break meat up.  Spoon off fat.  Reserve 1 egg yolk.  In large bowl combine remaining eggs with sausage, spinach, mozzarella, ricotta, salt, pepper, & garlic.  Set aside.  Prepare pastry, line 10 inch pie (Quiche) pan.  Spoon sausage, spinach mixture into pastry.  Cover with second pastry.  Cut slits in top.  In small bowl, combine egg yolk with water.  Brush top of pie.  Bake 375 for 1 hr. 15 min. or until golden brown.  Let pie stand when done for 10 minutes before cutting & serving.                                                                          

 

Can be made in casserole, without any crusts.  Use all eggs in mixture.  Bake 1 hr. with lid on.  Set to cool for 10 min.                        Serves 8

2  16oz. cans diced tomatoes

canned kidney beans (as desired)           

2 lb. browned ground beef     

2 med. onions, coarsely chopped          

2 cloves garlic, crushed           

1 to 1 1/2 Tbsp. chili powder           

1 tsp. pepper   

1 1/2 Tbsp salt

1 green pepper            


                       

 

Put all ingredients in crock pot, cover & cook on Low 10-12 hours (High 5-6 hrs.)    If no crockpot, cook in heavy pan on stove on low for 3 hrs.  Get chili hot at higher temperature before turning to low.

1 London Broil cut  of steak (or flank stead)      

2 Tbsp. salad oil for family sized (1T. if smaller steak)  

2 tsp. chopped parsley 1 clove garlic crushed (or equiv. garlic powder)          

1 tsp. salt         

1/8  tsp. pepper

2 Tbsp. lemon juice (family sized): 1 T. for smaller                                                 

 

Score steak on both sides with knife.  Marinate with remainder  ingredients 10  min. to 2 hours.  Broil about 10 to 20 minutes on each side depending on thickness .  Serve with juices (if done in oven broiler).

Hearty Gourmet Chili

Main dish        

 


1 lb. stew beef cut in small chunks 

1 lb. ground beef     

6 cups water    

1 chopped 8 oz. onion         

1 chopped 4 oz. green pepper

1 1/2 cups tomato juice     

1 T. minced garlic (3 cloves)           

1 4 oz. cup sliced mushrooms      

1 28 oz. can whole peeled tomatoes         

2 T tomato puree   

Salt, pepper, chili powder to taste    

Dried beans (black, kidney, pinto, etc. or variety pack)


           

 

Soak beans overnight in the 6 c. water.  When ready to cook: Bring beans to a boil, reduce heat to medium low, & cover Cook 1 hr. Stirring occasionally, cook stew cubes over med. heat for 5 min.  Add gr. beef & cook approx. 10 min.  until browned.. Remove & drain. Sauté onion, garlic, gr.  pepper, & mushrooms w/ 2 T. oil until tender.  Add meat & seasonings.  Mix well.  Add beans & bean liquid to mixture.  Add chopped tomatoes, tomato juice & puree.  Boil mixture, reduce to medium low, cover, & cook 1 1/2 hr.
