Chedddar Chowder

Cheddar Chowder

Soup

2 c. boiling water
2 c. chopped potatoes
1/2 c. carrot slices
1/2 c. celery slices
1/4 c. chopped onion
1 1/2 tsp salt
1/4 tsp. pepper
1/4 c. margarine
1/4 c. flour
2 c. milk
2 c. shredded sharp cheddar cheese
1 c. ham cubes

Combine water, vegetables, & seasonings. Cover; simmer 10 min. DO NOT DRAIN . Make a white sauce with margarine, flour, & milk. Add cheese; stir until melted. Add ham & un-drained vegetables. Heat. Do Not Boil. 6-8

8 cups water    

1 can (1lb.12 oz)tomatoes     

6 beef bouillon cubes  

1 c. chopped onion   

1 c. thinly sliced carrots 

1c.diced raw potatoes          

10 oz. pkg. frozen peas           

10 oz. froz. gr. beans  

10 oz. pkg.  frozen baby lima beans       

10 oz. pkg. frozen corn (white shoe peg is best)

1 Tbsp. salt,

1 bay leaf,

1/2 tsp basil,

(I add any leftover veggies from refrig.  I also add 1 pkg. froz. okra.)

1/4 tsp pepper 


 

                       

Combine ingredients in a large heavy pot Over meduim heat bring mixture to a boil.  Reduce heat and simmer for about 1 hour, or until vegetables are tender. Add meat as desired (shredded beef roast, chunks of baked chicken, or browned ground beef)

1 lb. dry navy beans (soak 3 or 4 hours)      

2 qts. water     

1 1/2 to

2 c. ham pieces

1 1/2 tsp. salt   

1/4 to 1/2 tsp pepper

1/2 c. chopped celery (& leaves) 

1 med. onion , minced

1 bay leaf        

1 carrot minced


                                               

 

Put all ingred. in crock pot Cover & cook on low for 10 to 12 hours (high 5-6 hrs).  Makes 2 1/2 qts.  After it has cooked a while, remove 1 cup of beans & mash them.  Mix 1/3 to 1/2 cup flour with some water 7 add all to soup, stirring often as it thickens.  Can be made on stove instead of crock pot.  Use heavy pan and cook on low heat for approx. 4 hours.  If you’re around kitchen, can use medium heat if you stir often.
